“With all of Monsieur Boillot’s 2020 Moulin-à-Vent bottlings, he chose to include about twenty percent stems in the fermentations. However, he hand-selected the stems to use at his sorting table and then added them back into the cuves prior to the start of fermentation, so that he could be certain to only use perfectly ripe stems. His 2020 Brussellions is another superb wine in the making, delivering an aromatic constellation of cassis, sweet cranberry, pigeon, fresh thyme, stony soil tones and plenty of upper register smokiness. On the palate the wine is deep, full and tangy, with lovely mineral drive and early complexity, ripe, moderate tannins and a long, vibrant and beautifully poised finish. 2025-2060”
